Coldiretti in recent years, has promoted the project "The Triennial National Program of Fisheries and Aquaculture 2013/2015 Project Fish +", an initiative that allows fishing vessels to pack the fish immediately after it’s been caught and therefore before returning to port.
After having studied and provided Italian fishermen and Aquacultures with targeted and efficient technological support, Coldiretti decided to collaborate with Ilpra for the packaging and with Movinox for the processing of fish.
During the tests carried out directly on the fishing vessels and the days of demonstration in the main Italian ports, if the fresh fish was sold "unprocessed", it would not generate much business. However thanks to the technology being used, the raw fish has been transformed into fillets and
minced which are hygienically packed in an invitingmanner so that it is ready to reach the consumer directly. This also increases shelf life and shortens the supply chain, which therefore increases the fisherman’s possibilities of making business.
The goal of this project is to help Italian fishing businesses become more competitive by providing them with the tools and skills to be able to offer more suitable products in order to increase their earnings and margins in the market. Currently 2/3 of fish products are being imported from other countries. In addition, the strong point of certain categories of imported fish is to be processed and ready for cooking, features that are not present today in our local counterpart, but that can be retrieved through this project.
Fishing vessels have been operatively equipped with Movinox machinery enabling them to perform operations such as squaring, eviscerating, threading and mincing the fish. Thanks to the semi-automatic heat sealer Ilpra Foodpack Energy, the processed fish is then packed in a protective atmosphere to increase the shelf life and palatability.
This process significantly reduces the quantity of fish being discarded, since it also allows for the less appealing looking fish to be sold as well, which normally would not even have been considered. The quantity of fish unsold is therefore solely dependent on the consumer since its being sold directly.
In addition to increasing profit margins, surely this alternative method allows the real application of a short supply chain and is able to increase the competitiveness of a very important sector for the Italian economy being fish.
The enhancement of the catching Italian fish is a goal to achieve as much understood by consumers who tend to prefer in investing on local products rather than imported ones.
We would like to thank Coldiretti for allowing us to work on this project, the Ministry of Agriculture, Food and Forestry who sponsored the operation, Movinox and all those who have collaborated on the initiative.
